Depends on the ketchup

I made a mushroom ketchup from an 18th century recipe, very nice on a lot of things.

I’ve only made one departure from traditional ingredients and condiments, in either roasts or fry ups, or fish and chips.

Sometimes have asparagus instead of peas with fish and chips.

nothing wrong with a bit of sauce on the side especially mint sauce with Lamb! but sauce on a £30 steak nah.
Ketchup on a roast is obscene.

Fruity sauce does have it roots in very old English and general European cooking. Like medieval old.

But English cookery has figured out you can let great English ingredients sing with complimentary sauces rather than overwhelming ones.

When I was in Latvia i had a Horse Radish flavoured Vodka shot. Fuck me that is vile.

I also have a horse radish plant in my garden and they are thugs.
